What to expect on the day
Cooking over live fire is where barbecue began, and there's nothing quite like it. No buttons, no thermostats—just flames, glowing embers and the skill to turn simple ingredients into unforgettable food.
Our Live Fire Masterclass is a full day dedicated to cooking over wood and charcoal using traditional techniques from around the world. You'll learn how to read a fire, build different heat zones, control temperatures without dials, and use flame, embers and smoke to create incredible flavour.
Throughout the day you'll cook on a range of live fire equipment, discovering techniques including direct grilling, ember cooking, hanging, plancha cooking and Asado-inspired methods. We'll also cover wood selection, fire management and the little tricks that make cooking over fire feel effortless rather than intimidating.
This is a hands-on class from start to finish, with plenty of opportunities to get involved, ask questions and cook alongside us. Whether you've never cooked over an open fire before or you're looking to sharpen your skills, you'll leave with the confidence to light a fire and cook something spectacular.
Fair warning... once you've tasted food cooked over live fire, your oven might start gathering dust.
Techniques learnt
- Fire management
- Use a variety of live fire equipment, including: Kadai bowl, fire cage, Flamery Asado grills, Petromax fire bridge
- Meat preparation
- Direct and indirect cooking
- Cooking to temperature and not to time
- Managing equipment throughout the cooking process
The Menu
Learn to create delectable dishes such as:
- Campfire brisket chilli with coal baked jacket potatoes
- Cote de Bouef with a fire roasted Chimichurri
- Hung poussins finished with Suffolk Gold sauce
- Whole pork belly with crispy crackling
- Fire roasted butternut squash and harissa roasted carrots

The school is based off road and can be tricky to find. Using a sat nav follow the instructions to Spout Lane and follow the quiet road until you see and army base pill box on your right hand side and there is a right hand turn very shortly after this. Follow the lane all the way to the top and you will find us waiting for you at Slough Hall.
Parking is limited, we will help you park on the day but wherever possible please do car share.
