What to Expect
If you've ever wanted to master the art of smoking food, this is the class you've been looking for.
Designed for anyone who wants to take their barbecue to the next level, our Smoking Masterclass is a full day dedicated to creating incredible flavour with wood, charcoal and smoke. Whether you're aiming for competition-worthy brisket, perfectly smoked ribs or beautifully delicate cold-smoked fish and cheese, we'll show you the techniques that make all the difference.
You'll spend the day cooking on a range of specialist equipment, including the Traeger Timberline XL, Masterbuilt XT, Pitboss Titan and Kamado Joe ceramic grills, learning how each one produces smoke differently and how to get the very best from them.
Together we'll explore the three core smoking techniques—Cold Smoking, Hot & Fast and Low & Slow—covering everything from wood selection and smoke quality to temperature management, airflow and timing. We'll also explain why each technique works, helping you understand the science behind great barbecue rather than simply following recipes.
Expect a full day of hands-on cooking, plenty of expert tips, myth-busting, great food and enough smoked goodness that your clothes will smell like a campfire long after you get home... consider it a badge of honour.

- Cold smoked cheese and snacks (winter only)
- Smoked Cocktail (summer only)
- Brisket

- Boston Butt
- Central Texas style smoked chicken finished with a butter mop
- Served with pit beans, pickles, coleslaw and bread foldies
